To make Macaroni-Shrimp Salad, you'll need:

  • 1/2 cups water
  • 1 lb shrimp unpeeled medium fresh
  • 1
  • 1/2 cups cooked elbow macaroni
  • 1 cup frozen peas thawed
  • 2 hard-cooked eggs chopped
  • 1 medium bell pepper chopped
  • 1/2 cup chopped pimento
  • 1 tbsp chopped onion
  • 1/4 cup lite sour cream
  • 1/2 cup lite mayonnaise
  • 1/2 tsp salt
  • 1/8 tsp pepper lettuce leaves

Method

  • Bring the water to a boil; add the shrimp and cook 3 to 5 minutes
  • Drain well and rinse with cold water
  • Chill
  • Peel and devein shrimp.
