Method

  • Preheat oven to 375~.
  • Lightly oil a 2 quart casserole dish or spray with a nonstick cooking spray.
  • In casserole - layer veggies in the following order: carrots green beans red pepper onions and then mushrooms.
  • Sprinkle spices evenly over veggies.
  • Spoon stewed tomatoes and their liquid over the veggies evenly breaking up large pieces of the tomatoes.
  • Cover tightly and bake for 1 hour.
