To make Mardi Gras Salad, you'll need:
  • 100 lg Tomato 075 c Sliced yellow squash
  • 100 c Shredded rec sabbage
  • 100 c Unpeeled sliced purple Turnip 050 c Sliced radishes 025 c Sliced carrots
  • 100 md Onion sliced very thinly 075 c Sliced cucumber 025 c Coarsely choppd fresh parsly
  • 100 Red leaf lettuce
  • 100 Vinaigrette Dressing

Method

  • Toss all the ingredients together except the lettuce and dressing
  • Make beds of lettuce on salas plates and place the rest of the salad on top
  • Pour the dressing over and serve.
