Ingredients
To make Meatball Grinders, you'll need:
  • 1 lb ground chicken
  • 1/2 cup fresh whole-wheat or white bread crumbs = (from
  • 1 slice of bread)
  • 1 egg white
  • 3 tbsp finely-chopped fresh parsley
  • 2 garlic cloves minced
  • 1/4 tsp salt
  • 1/8 tsp freshly-ground black pepper Nonstick cooking spray as needed
  • 1/4 cup chopped onion
  • 1 can whole tomatoes - (8 oz) drained and coarsely chopped
  • 1 can reduced-sodium tomato sauce - (4 oz)
  • 1 tsp dried Italian seasoning
  • 4 small hard rolls split
  • 2 tbsp grated Parmesan cheese

Method

  • Combine chicken bread crumbs egg white parsley garlic salt and pepper in medium bowl
  • Form mixture into 12 to 16 meatballs.
