To make Mexican Chicken And Noodles, you'll need:
  • 2 (3 oz) chicken breasts without skin boneless
  • 1
  • 1/2 cups chicken broth fat-free cooking spray non-fat
  • 1 green bell pepper chopped
  • 1 medium onion chopped
  • 1/4 cup chicken broth fat-free
  • 1 tsp crushed garlic
  • 1 can (10 oz) diced tomatoes and chilies
  • 3 tbs flour
  • 1 tbs Molly McButter®
  • 8 slices American cheese diced or cut into small pieces fat-free
  • 1/4 tsp pepper salt to taste
  • 1 package (7 oz) no yolk noodles or dumplings cooked

Method

  • Cook chicken breasts in 1 1/2 cups chicken broth over low heat for 7 to 10 minutes
  • Cool
  • Dice chicken breasts adn set aside
  • Spray large skillet with cooking spray and saute green pepper and onion for 3 to 4 minutes over medium- low heat
  • Add 1/4 cup chicken broth and garlic
  • Continue cooking for 5 minutes
  • Add tomatoes and chilies.
