To make Mexican Roll Ups, you'll need:
  • 6 whole-wheat tortillas - (12" dia)
  • 6 large romaine lettuce leaves
  • 1
  • 1/4 lb sliced cooked roast beef
  • 1 cup diced tomatoes
  • 1 cup diced red and yellow peppers
  • 2 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 2 tsp cumin

Method

  • For each roll up tear off about a 15-inch piece of either waxed paper or aluminum foil.
