To make Miami Chicken Salad, you'll need:
  • 300 c Cooked diced chicken
  • 200 c Fresh grapefruit
  • 150 c Celery diagonally sliced -1/8 inch thick 025 ts Lime peel - grated
  • 200 tb Lime juice 050 c Mayonnaise - reduced fat or free type 050 ts Salt 025 ts Pepper
  • 200 ea Oranges peeled and sliced -1/4 inch thick Endive

Method

  • In a small bowl combine the lime peel lime juice mayonnaise salt and pepper
  • Beat with a rotary beater until mixed and fluffy
  • Fold into the chicken mixture
  • Line a salad bowl with snipped endive
  • Place the chicken salad in the center; arrange the orange slices around the outside edge over the endive
  • Chill for at least 1 hour
  • Serves 6
