Miami Chicken Salad

  • : THE GREAT AMERICAN CHICKEN COOKBOOK by Iona Nixon Copyright 198 2. Mix together the chicken grapefruit sections and celery
  • In a small bowl combine the lime peel lime juice mayonnaise salt and pepper
  • Beat with a rotary beater until mixed and fluffy
  • Fold into the chicken mixture
  • Line a salad bowl with snipped endive
  • Place the chicken salad in the center; arrange the orange slices around the outside edge over the endive
  • Chill for at least 1 hour
  • Serves 6

  • 200 ea Oranges peeled and sliced -1/4 inch thick Endive
