To make Monterey Penne, you'll need:
  • 1 Red or green pepper cut in julienne strips (or Both)
  • 1 cup Quartered fresh mushrooms
  • 1 Onion coarsely chopped
  • 4 cup Hot cooked penne pasta drained
  • 1 cup Monterey jack cheese shredded

Method

  • Place veggies and 2 tbsp water in a covered microwaveable dish
  • Cook on high for 4-5 minutes
  • Drain veggies and toss with pasta and cheese
  • Makes 2 servings.
