Oriental Smoked Salmon Rolls

Method

    >
  • Combine the papaya, cucumber and radishes in a bowl.
  • Whisk together the rice wine vinegar, lime juice and zest, soy sauce and the honey, then pour over the papaya salad and allow to stand for 2 hours. Drain and fold in the spring onions.
  • Cut the smoked salmon into 7.5 cm (3 inch) lengths. Place 2 leaves of each herb on the salmon, top with a little of the picked vegetables and roll up tightly. Cover and refrigerate until ready to serve.

To make Oriental Smoked Salmon Rolls, you'll need:
  • 1 green paw-paw or papaya, peeled and cut into thin matchsticks
  • 1/2 cucumber, peeled and cut into thin matchsticks
  • 8 radishes, thinly sliced
  • 125 ml (4 fl oz) rice wine vinegar
  • Juice and zest of 3 limes
  • 1 tablespoon reduced-salt soy sauce
  • 1 tablespoon liquid honey
  • 6 spring onions, finely shredded
  • 350 g (12 oz) smoked salmon, cut into long strips
  • 48 mint leaves
  • 48 coriander leaves
