Oriental Smoked Salmon Rolls

Ingredients
To make Oriental Smoked Salmon Rolls, you'll need:
- 1 green paw-paw or papaya, peeled and cut into thin matchsticks
- 1/2 cucumber, peeled and cut into thin matchsticks
- 8 radishes, thinly sliced
- 125 ml (4 fl oz) rice wine vinegar
- Juice and zest of 3 limes
- 1 tablespoon reduced-salt soy sauce
- 1 tablespoon liquid honey
- 6 spring onions, finely shredded
- 350 g (12 oz) smoked salmon, cut into long strips
- 48 mint leaves
- 48 coriander leaves
Method
- Combine the papaya, cucumber and radishes in a bowl.
- Whisk together the rice wine vinegar, lime juice and zest, soy sauce and the honey, then pour over the papaya salad and allow to stand for 2 hours. Drain and fold in the spring onions.
- Cut the smoked salmon into 7.5 cm (3 inch) lengths. Place 2 leaves of each herb on the salmon, top with a little of the picked vegetables and roll up tightly. Cover and refrigerate until ready to serve.
