To make Pineapple Cream Tarts, you'll need:
  • 1 cup (8-oz can)crushed pineapple -packed in fruit juice -undrained
  • 1 package (4-serving)JELL-O sugar-free -vanilla cook & serve -pudding mix
  • 1 package (4-serving)JELL-O sugar-free -lemon gelatin
  • 1/2 cup Water
  • 1 package (8-oz)Philadelphia Fat Free -Cream Cheese Sugar substitute to equal -2 tb sugar
  • 1/2 tsp Coconut extract
  • 1 (6-single serve)package -Keebler graham cracker -crusts
  • 6 tbsp Cool Whip Lite
  • 1 Maraschino cherry

Method

  • In a medium saucepan combine undrained pineapple dry pudding mix dry gelatin and water
  • Cook over medium heat stirring constantly until mixture thickens and starts to boil
  • Remove from heat
  • Place pan on a wire rack and allow to cool completely
  • In a medium bowl stir cream cheese with a spoon until soft
  • Stir in sugar substitute and coconut extract
  • Add cooled pineapple mixture
  • Mix gently but thoroughly
  • Evenly spoon mixture into crusts
  • Top each with 1 tablespoon Cool Whip Lite
  • Cut cherry in half and each half into 3 pieces
  • Garnish each tart with a cherry piece
  • Refrigerate at least 1 hour.
