Ingredients
To make Pineapple Crumble, you'll need:
  • FILLING
  • 16 oz Can unsweetened pineapple - crushed & drained **
  • 2 medium Pears peeled cored & diced
  • 1 tsp Vanilla extract
  • 1/2 tsp Cinnamon
  • 1 dash Nutmeg CRUMB TOPPING
  • 3 tbsp Soy or safflower margarine
  • 2/3 cup Matzo meal
  • 1/3 cup Ground walnuts
  • 1/2 cup Light brown sugar **
  • 1/2 tsp Cinnamon **PERSONAL NOTE From Ursula Taylor - for diabetic use - use pineapple packed in its own syrup and use Brown SugarTwin equal to
  • 1/2 c brown sugar

Method

  • Preheat oven to 350F
  • Combine filling ingredients in a mixing bowl pat into a 9-inch square baking pan
  • Melt margarine in a skillet remove from heat
  • Stir in the remaining topping ingredients till evenly coated with the margarine
  • Sprinkle evenly over the top of the pineapple mixture
  • Bake 25 to 30 minutes
  • This is used for Jewish Passover
