Ingredients
To make Plum Tomato And Escarole Salad With Dressing, you'll need:
  • 2 cups escarole washed and torn
  • 2 cups romaine lettuce washed and torn
  • 2 cups bibb lettuce torn
  • 12 slices plum tomatoes
  • 1/2 cup balsamic vinegar
  • 1 tbsp olive oil
  • 1 tbsp parmesan cheese
  • 2 garlic cloves minced
  • 1 tbsp lemon juice
  • 1/4 cup low-fat low-sodium chicken broth Salt to taste Freshly-ground black pepper to taste

Method

  • In a salad bowl combine the lettuces and tomatoes
  • Whisk together the remaining ingredients and toss with the salad.
