To make Presto Pesto Eggplant, you'll need:
  • 1 small eggplant thickly sliced into
  • 1" circles
  • 1 tbsp prepared pesto sauce
  • 1 small tomato diced Freshly-ground black pepper to taste
  • 1 tbsp Parmesan cheese
  • 2 tbsp chopped fresh parsley

Method

  • Preheat the oven to 350 degrees.
  • Spray a baking sheet with nonstick cooking spray.
  • Lay the eggplant slices on the baking sheet.
  • Be sure the sides are not touching.
