To make Pumpkin-Bran Muffins, you'll need:
  • 1 cup Flour
  • 1/2 cup Bran
  • 1 tbsp Sugar
  • 2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Ground cinnamon
  • 2 tbsp Vegetable oil
  • 1/2 cup Pumpkin canned or cooked
  • 1 Egg
  • 3/4 cup Orange juice
  • 1/3 cup Raisins
  • 1 tbsp Wheat germ

Method

  • Combine all the ingredients except the wheat germ in a mixing bowl
  • Stir to blend
  • Spoon into lightly oiled muffin tins (or paper baking cups sprayed with non-stick spray - my choice.) Sprinkle on the wheat germ
  • Bake in a 400 F oven for 10 to 15 minutes or until lightly browned.
