Ingredients
To make Quick Chili, you'll need:
  • 2 tsp olive oil
  • 1 medium onion chopped
  • 1 small red pepper chopped
  • 4 garlic cloves minced
  • 1 lb lean pork tenderloin trimmed ground = (your butcher will do this for you)
  • 3 tbsp ground chili powder
  • 1 tsp cinnamon
  • 1/2 tsp allspice
  • 2 cups canned tomatoes undrained and coarsely chopped
  • 2 cups low-sodium beef broth
  • 1 tbsp red wine
  • 1 tbsp Worcestershire sauce Freshly-ground black pepper to taste

Method

  • In a stockpot over medium-high heat heat the oil
  • Add the onion and pepper and saute for 5 minutes
  • Add the garlic and saute for 2 minutes
  • Add the pork and saute for 5 minutes.
