To make Sally Lunn Peach Cake, you'll need:
  • 2 cup All-purpose flour
  • 3 tsp Baking powder
  • 1/2 tsp Salt
  • 1 Egg beaten
  • 3/4 cup Skim or
  • 1% milk
  • 1/4 cup Vegetable oil
  • 1/4 cup Sugar Nonstick cooking spray Fresh or juice-pack peaches

Method

  • Sift flour with baking powder and salt
  • Combine egg milk and oil in a large bowl
  • Add sugar
  • Stir in dry ingredients
  • Do not overmix
  • Place in loaf pan that has been coated with vegetable spray
  • Bake at 375 degrees F
  • for 30 minutes
  • Top each slice with 1/3 cup peaches
  • Makes 12 servings.
