Sauteed Salmon Spinach Salad

Sauteed Salmon Spinach Salad

Serves: 4

Method

  • Arrange the salmon on a plate
  • In a skillet heat 1 tablespoon of olive oil
  • WHen hot saute the spinach over medium heat for 1 1/2 minutes
  • Mix in the salt and pepper and divide the spinach among for plates
  • Heat the remaining tablespoon of olive oil in the skillet
  • Saute the onion and tomatoes over medium heat until the onion is tender about 5 minutes
  • Push to one side and add the salmon
  • SAute over medium heat until cooked through about 5-6 minutes
  • Arrange teh salmon on the spinach and top with tomato and onions
