To make Savory Potato Soup, you'll need:
  • 5 cups cubed peeled potatoes
  • 3 cups fat-free (skim) milk
  • 1 cup water
  • 3 cubes reduced-sodium chicken bouillon
  • 1 cup finely-chopped onion
  • 1/2 cup finely-chopped celery
  • 1 tbsp reduced-calorie margarine
  • 3/4 tsp salt
  • 1/4 tsp freshly-ground black pepper
  • 1/8 tsp garlic powder

Method

  • Place potatoes in a large Dutch oven cover with water and cook over medium-high heat until potatoes are tender when pierced with a fork (about 15 minutes)
  • Drain off water.
