Shepard's Pie

Serves: 6

Method

  • In a medium saucepan place the peeled potatoes
  • Add water to cover
  • Bring to a boil and boil potatoes for about 20 minutes until potatoes are tender
  • Drain
  • Mash potatoes with hot milk and olive oil until fluffy
  • Set aside.

To make Shepard's Pie, you'll need:
  • 4 medium russet potatoes peeled
  • 1/2 cup skim milk heated
  • 1 tbsp olive oil
  • 1/2 lb ground lean turkey
  • 1/4 lb lean ground beef
  • 1 medium onion chopped
  • 2 carrots sliced
  • 1 cup low-fat low-sodium beef broth
  • 1 tbsp cornstarch or arrowroot
  • 2 tbsp water
  • 2 tbsp tomato paste Salt to taste Freshly-ground black pepper to taste
  • 1 cup frozen peas thawed drained
  • 1/4 cup Cheddar cheese
