To make Shrimp Curry - Quick And Easy Diabetic Menus, you'll need:
  • 1 tsp Margarine
  • 1 small Onion chopped
  • 1/4 cup Bell pepper chopped
  • 1 cl Garlic minced
  • 3/4 tsp Curry powder or to taste
  • 1/4 tsp Ginger
  • 1/2 tsp Chili powder
  • 1/2 cup Yogurt
  • 3/4 lb Shrimp cooked and peeled

Method

  • In a non-stick saucepan melt the margarine
  • Add and saute the onion green pepper garlic and spices over medium heat for 3-4 minutes
  • Add yogurt and shrimp
  • cover and cook over low heat until hot stirring occasionally
  • Serve over rice
