Ingredients
To make Shrimp Heroes, you'll need:
  • 1 lb cooked shrimp = (cut bite size if large)
  • 1/2 cup finely-diced celery
  • 1/4 cup finely-minced red onion
  • 1/3 cup fat-free mayonnaise
  • 1 tbsp minced fresh tarragon = (or
  • 1 tspn crushed dried tarragon)
  • 4 hero rolls
  • 1 cup shredded lettuce
  • 2 medium tomatoes thinly sliced
  • 1 medium green bell pepper seeded and thinly sliced crosswise into rings

Method

  • In a large bowl combine shrimp celery red onion mayonnaise and tarragon
  • Mix well.
