To make Speedy Garden Roll-Ups, you'll need:
  • Chick-Pea Spread (see below)
  • 4 flour tortillas - (6" dia)
  • 1/2 cup shredded carrot
  • 1/2 cup shredded red cabbage
  • 1/2 cup shredded reduced-fat Cheddar cheese (2 oz)
  • 4 red leaf lettuce leaves CHICK-PEA SPREAD
  • 1 can chick-peas - (15 oz) drained rinsed
  • 1/4 cup nonfat cream cheese
  • 1 tbsp finely-chopped onion
  • 1 tbsp chopped fresh cilantro
  • 2 tsp lemon juice
  • 2 garlic cloves
  • 1/2 tsp sesame oil
  • 1/8 tsp freshly-ground black pepper

Method

  • Prepare Chick-Pea Spread
  • Combine chick-peas cream cheese onion cilantro lemon juice garlic sesame oil and pepper; process until smooth
  • (Makes about 1 cup)
