To make Spicy Corn Salsa, you'll need:
  • 2 cups corn kernels
  • 1/4 cup diced ripe avocado
  • 1/2 cup minced red onion
  • 2 tbsp minced seeded tomato
  • 2 tbsp minced jalapeño pepper
  • 2 tbsp lime juice
  • 2 tsp sugar
  • 1 tbsp red wine vinegar

Method

  • Combine all the ingredients in a medium-sized bowl
  • Cover and refrigerate for 1 hour.
