Ingredients
To make Spicy Summer Gazpacho, you'll need:
  • 1 cup sliced cucumbers
  • 2 cups chopped tomatoes
  • 1/2 cup sliced green pepper
  • 1/2 cup sliced onion
  • 4 cups spicy tomato juice = (or regular tomato juice if you wish)
  • 1/3 cup red wine vinegar
  • 1/4 tsp hot sauce (optional) Salt to taste Freshly-ground black pepper to taste

Method

  • In a blender puree half of the vegetables with half of the tomato juice.
