To make Spinach-Stuffed Chicken Breasts, you'll need:
  • 3/4 cup frozen choppen spinach thawed drained
  • 1/4 cup low-fat ricotta cheese - (2 oz)
  • 1/2 cup shredded part-skim mozzarella cheese (2 oz)
  • 2 tsp chopped fresh tarragon = (or
  • 1/4 tspn dried tarragon)
  • 1/4 tsp salt
  • 1/8 tsp freshly-ground black pepper
  • 4 chicken breast halves - (1
  • 3/4 lbs)
  • 2 tsp olive oil

Method

  • Preheat oven to 350 degrees
  • Prepare a shallow baking pan with nonstick pan spray.
