To make Spoon Bread, you'll need:
  • 1 cup boiling water
  • 1 cup yellow cornmeal
  • 1/2 tsp salt
  • 2 tsp reduced-fat margarine
  • 1 tsp baking powder
  • 2 eggs separated
  • 1
  • 1/2 cups fat-free (skim) milk

Method

  • In a large heatproof bowl pour the boiling water over the cornmeal and stir well
  • Stir the salt and margarine into the cornmeal and allow to cool.
