To make Stuffed Flank Steak, you'll need:
  • 1 lb flank steak
  • 1 cup soft whole wheat bread crumbs
  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 1/4 cup chopped carrots
  • 1/4 cup chopped tomato
  • 1 tbsp parsley flakes
  • 1/2 tsp powdered thyme
  • 1 dash pepper
  • 2 tbsp water

Method

  • Pound steak to tenderize
  • Cut pocket in center of steak
  • Combine remaining ingredients and mix well
  • Stuff steak and secure opening with skewers
  • Broil 3 inches from heat 3-4 minutes on each side or longer to taste
  • To serve cut thin slices diagonally across grain.
