Sweet Sour Rice Salad

Method

  • In large mixing bowl combine rice corn beans peppers onion and pineapple
  • In another bowl whisk together sweetener oil and vinegar
  • Pour over rice mixture
  • Add salt to taste
  • Cover and chill several hours at least before serving.

  • 1 cup corn frozen or fresh

  • 1/2 red bell pepper chopped
  • 1/2 green bell pepper chopped
  • 1 red onion chopped
  • 1 cup pineapple tidbits
  • 2 tbs sweetener
  • 2 tbs canola oil
  • 2/3 cup vinegar salt to taste
