To make Tangy Fish Kabobs, you'll need:
  • 8 oz fresh fish filets if using frozen thaw and drain
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp lemon juice
  • 2 tsp fresh basil
  • 2 tsp fresh oregano
  • 2 tsp fresh thyme
  • 1 tsp dried rosemary
  • 6 mushrooms
  • 1 small zucchini cut in
  • 1/2-inch slices
  • 1 small onion cut into small wedges
  • 1 medium red or green bell pepper cut into
  • 1-inch chunks
  • 4 cherry tomatoes
  • 1 small yellow squash cut in
  • 1/2-inch slices
  • 3 tsp lite soy sauce

Method

  • Cut filets into 1 1/2-inch pieces and place in a small bowl
  • Whisk together the oil lemon juice basil oregano thyme and rosemary and pour over the fish tossing gently to coat
  • Cover tightly and marinate in the refrigerator for 1 hour.
