To make Thyme-Fig Fruitcake, you'll need:
  • 1/2 cup Unsweetened apple juice
  • 1/2 tsp Dried thyme
  • 1 cup Finely chopped dried figs
  • 1
  • 1/4 cup Flour
  • 1/4 cup Cornmeal
  • 2 tsp Baking powder
  • 1/4 tsp Baking soda
  • 6 tbsp Vegetable oil
  • 2 tbsp Sugar
  • 1 Egg
  • 1/4 cup Pine nuts toasted

Method

  • Combine the apple juice thyme and figs in a bowl
  • Set aside for 10 minutes
  • Stir together the flour cornmeal baking powder and baking soda in a bowl.
