Ingredients
To make Tuna Loaf, you'll need:
  • 100 c Potato; peeled and grated
  • 100 c Carrots grated
  • 100 cn Tuna 050 c Onion; chopped 033 c Parsley
  • 100 tb Pimento; drained and chopped
  • 100 cl Garlic; minced
  • 200 Eggs
  • 100 ts Thyme; dried crushed 025 ts Sage 050 ts Salt 025 ts Pepper
  • 200 tb Cornstarch 067 c Mozzarellalow fat; shredded - can sub cheddar etc

Method

  • Preheat oven to 350^
  • Spray 8x4x2 1/2 pan with non stick spray
  • In a saucepan steam potatoes and carrots over simmering water for 5 min or until tender
  • In a large bowl mix together tuna potato carrots onions parsley pimento and garlic until well combined
  • In a small bowl stir together egg and seasonings; stri in cornstarch
  • Mix into tuna mixture
  • Transfer mixture to loaf pan
  • Cover with foil
  • Bake 20 mins
  • Uncover; bake for 10 mins more or until heated through
  • Sprinkle cheese over top and bake 1-2 minutes until cheese melts
  • Let stand 5 mins; slice cal: 293 cal
