To make Twice-Baked Sweet Potatoes, you'll need:
  • 2 medium sweet potatoes
  • 3/4 tbsp fat-free sour cream
  • 1
  • 3/4 tsp Equal for Recipes = (or
  • 6 packets Equal sweetener or
  • 1/4 cup Equal Spoonful)
  • 1/2 tsp orange extract Salt to taste Freshly-ground white pepper to taste
  • 2 tbsp chopped pecans = (or
  • 4 tspns flaked coconut)

Method

  • Lightly grease potatoes; pierce with tines of fork
  • Place potatoes in baking pan and bake in a 375 degree oven until tender 35 to 40 minutes
  • Let stand until cooked enough to handle.
