Ingredients
To make Vegetable Paella, you'll need:
  • 1/2 cup chopped onion
  • 1 garlic clove minced Nonstick olive oil cooking spray as needed
  • 1 can fat-free reduced-sodium chicken or vegetable broth - (14 oz)
  • 1 cup uncooked rice
  • 1 cup chopped plum tomatoes see * Note
  • 1/4 cup water
  • 1/2 tsp dried oregano
  • 1/2 tsp chili powder
  • 1/8 tsp turmeric
  • 1/8 tsp salt Freshly-ground black pepper to taste
  • 1 red bell pepper cut short strips
  • 1 jar marinated artichoke hearts - (6 oz) drained quartered
  • 1/2 cup frozen peas
  • 1/8 tsp hot pepper sauce

Method

  • * Note: If plum tomatoes are unavailable substitute 1 can (14 1/2 ounces) undrained diced tomatoes
  • Omit water.
