What have you eaten today? (Low carb forum)

The reactions of others are great. A couple of weeks back a new colleague exclaimed as she watched me making my morning tea: ‘you put double cream in your tea?’!!
That sounds quite nice to me I have my tea strong and sweet (sweetener) and I don't see why creamy wouldn't work too!
 
Hello everyone, much better day weather wise although BG has been a bit high for my liking, maybe there is something lurking health-wise?
B almond milk smoothie ham and cheese
L salmon salad with a drizzle of dressing followed by some nuts
Coffee with cream when I got home
D Keto burger casserole with a side salad and mayo
 
Good evening all and welcome back @ziggy_w - thanks for the Lupin information. My mind was edging towards using them in Casoulet so we'll see. Today was mainly about seeing pictures and facetime with new Miss P as well as entertaing grandson. He did enjoy making LC Nutella with my wife. Can't say there's anything I can eat now that I didn't before but I would never have eaten flaxseed, chia seed or inulin before and would have avoided almond milk and 100% chocolate like the plague. Menu below:

Breakfast+Mid morning snack: 3 pints of tea with h/m almond milk; 2 pints Orange and Lotus flower green tea
Lunch : 1 slice fathead pizza so as not to waste everything (to me better cold) but not a pleasure for me; 2 eggs; h/m mayo, radish, cucumber, spring onion.
Afternoon snack: Tea and h/m high fibre chocky bar
Evening meal: Nordic Walking then tea with almond milk
 
Quick post for me tonight, I’m off to see Mama Mia in a few mins. I’ll read and catch up later, but hope you’ve all had a good day.

B: smoked salmon, scrambled egg, avocado and coffee with cream.

Went for a swim this morning -lovely.
Lunch: poached salmon fillet with the last of the celeriac remoulade and a green salad with walnuts. Sf jelly &cream

D: roast lamb, broccoli cheese, roast celeriac, buttery green beens. Decaf coffee and cream. Choc chia pud with a spoonful of almond butter stirred through.
 
@maglil55 did you use monkfruit in the chilli sauce?
I’ve been meaning to try it.
That sauce recipe just pushed me over the edge and I ordered some.

Today:
1pm the last of the Buzzard Bites (sad to see them go) and the last of the Bloodberry (even sadder). Back to strict carnivoring.
7pm a hugely over-filled lo-dough with grated cheese, egg mayo and Branston.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries and cream washed down with a black coffee.
Lunch: ham, with cauliflower, broccoli and cucumber salad followed by Greek yoghurt and raspberries.
Mid afternoon: Cappuccino at Nero’s with my daughter and a smuggled in PhD bar.
Dinner: coconut and lemongrass chicken stir fry, no noodles but extra beans sprouts to kid the eye! (@Goonergal don’t ask for the recipe ;) I used a ready made sauce which happens to be LC!) Followed by orange chia pudding with a couple of chopped strawberries and a spoonful of LC chocolate granola sprinkled on top.

B - overnight oats with berries, usual giant mug of tea

L - feta salad with sundried tomatoes in Olive oil which I drizzled on the salad - a few nuts as well. Sugar free jelly

D - garlic butter steaks, mangetouts and baby corn. Chocolate halo top, blackcurrant sugar free jelly and double cream. Sounds a bit odd but it's black forest gateaux ish!

I'm trying to CopyMeThat the recipe and I keep getting an error message. I'll also be interested to hear about the monkfruit sweetener.

Yes. Not cheap, got it on Amazon but boy is it sweet. Did absolutely nothing to my BGs. I was taken by the fact it had been used for donkeys years in Asian countries. That and the nutionional values was enough for me (That and the fact I wanted a Thai tasting sweet chilli).

Meant to add they use it loads on that site plus they are REALLY keen on Asian keto recipes. There are some cracking recipes on the site if yo7 like Asian food and usually very simple. You might find you'll need liquid aminos for some of their recipes but that's easy to get in Holland & Barrett. I have no idea what they do mind.

@maglil55 did you get @ monk fruit mixed with erythritol as a granulated sweetner or a liquid extract? Just took a look on amazon and found it a bit confusing.

I got the Lakanto brands - golden and the classic. Golden is a good brown sugar substitute. Classic is just well a sugar substitute.

I do have my eye on the monk fruit "maple syrup". Ricotta pancakes with blueberries and maple syrup anyone?

Thank you that’s very helpful it’s expensive without a recommendation I was also tempted by the look of the maple syrup substitute for pancakes or yoghurt etc

Thinking about it has made my decision. I'm ordering the maple syrup substitute.
 
Hi all wonderful relaxing day treating my mum to some new clothes- she has taken some of my low carb advice to help prevent further deterioration of her kidneys - after being very anti when I first started - and has lost half a stone round her middle and is down one dress size I felt responsible so treated her! She is thrilled and she is looking better too. She still has small amounts of bread, potatoes @nd a few treats but was very very high carb and low fat and piling on weight before so good balance for her and she’s 87 and seven months so hard to make big changes. Her kidney function is still low but she seems to have stuck at this level at this last test. Dr pleased with her at med appt on Monday morning and her hbaca1 down to 42.
@Debandez at this rate she will be one of the oldest success stories! It’s never too late.
Breakfast bacon egg and mushrooms fried in lard
Lunch at m and s deli counter large seafood platter shared with mum with celebratory glass of prosseco - met up with youngest son - building up to my birthday weekend!
Dinner beef brisket - put in crockpot before left - on bed of buttered cabbage and glass red wine planning a scoop of oppo choc and mint ice cream later.
Remind me I am on a diet? Feels anything but that .........
That post made me smile and also laugh out loud. Luckily I'm not in the middle of a long queue at the checkout in a mega supermarket! I'm at home working on the Birmingham event:) I've popped your mum on my inspirational stories document! Do you think she would mind sharing @shelley262 what a great achievement. It just shows it's never too late to try LCHF. It's already made a big difference to her (and your pocket by the sounds of things;)). And a bonus. Her kidney function is stable. I'm a massive fan of this 'diet' too. I'm so happy as some of my friends are trying it and not all diabetic.One diabetic friend told me yesterday he has lost over half a stone on it after reading the gazette article. Could never lose one pound on the existing advice given to him! He hasnt had a recent hba1c test but my guess is its come down. Love a success story.
