What have you eaten today? (Low carb forum)

I'm miles behind again! Wednesday 8 November bed 7.8 FBG 7.6.

B. TAG and 2 slices of SRSLY toast with back bacon. Benecol dairy free.

L 2 Skinny food Co. Crackers with Ploughman's Pate

D. Roast chicken breast with sage and onion stuffing. 3 potato fritters. CC little chocolate pot.

@Rachox - sorry about the last-minute delay to your op. Hopefully, it goes ahead next time.

Thursday 9 November - bed 8.1 FBG 7.7

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Nothing

D. Stir fry of diced aubergine, halloumi, chicken with a fried egg on top. CC little chocolate pot raspberries. 20231109_185248.jpg
 
Friday 10 November bed & FBG both 7.9. Nice to see you back, @ianpspurs. Half day Friday again. Hubby decided we are going furniture shopping this afternoon. We do need new sofa/chairs. I did want to wait but Hubby is paying!

B. TAG and 2 slices of SRSLY toast with Ploughman's Pate. Benecol dairy free.

L. Nothing - furniture shopping.

D. Peri Peri chicken wings, alioil. CC little chocolate pot. Gin and zero lemonade with a strawberry.

Hubby was most impressed (and relieved!) that I decided on furniture in the first store we went to and had it all done and dusted in 1 hour! He was prepared for a tour, but I do tend to make a decision quickly if something fits the bill. I talked him into a new rug as well.
 
Tins of jackfruiit have just arrived in the post. Some experimentation to be done to find out if I can tolerate it in its, more or less, raw state. I know I can't take it once it's processed. Not today, though. If it makes me ill, it will knock me out for tomorrow as well, and I have to go out tomorrow. So, Friday it will have to be.
 
B: chicken stock cube dissolved in boiling water with 1T ACV
L: 120ml kefir, 8 mixed nuts, olives and feta cheese, sliced home made biltong, slice of Keto Chef ultra low carb bread with butter and marmite. (Excuse the state of my work top in the photo).

This week seems to be rushing past and hope it is for you too @Rachox as you wait for your rescheduled operation on Friday - I'm madly crossing fingers for you.
B kefir then fried some mushrooms one slice of bacon and egg with one slice of LC toast
l small portion of sauerkraut and kimchi with stilton and lc seeded crackers

Then pudding of a spoon of what I call my winter berries ( I put a pack of frozen mixed berries with lemon juice into a Kilner jar and keep in fridge where they keep for up to a week) served with a few spoons of yoghurt

D hm Bolognese and glass of red wine followed by LC crumble
 
Two mugs of tea until 10.25 ish - had to take 1 car in for MOT in Cambs then on to bloods in Newmarket: diary error
2 babybels after bloods and some of JKP's tea to take tablets. Hospital is opposite Aldi - convenient roundabout - so sauntered around there.Treated JKP to one of their not Baileys Advent calendars - no expense spared.
KC turkey breast roll, Dr Almond speculoos and CWC 2.00 pm ish
61 gms Cornish cruncher and another mug of tea watching cricket
Trout (Aldi bargain) salad: salad leaves, celery, radishes, spring onion, cucumber, tomatoes, toasted pine nuts topping, EVO/Acv (with mother) and dijon dressing. Fish salad has basically been my default main meal - usually mackerel or salmon - for 8 years until recently.

Evening all

Today:

B: Two poached eggs topped with a knob of butter, slices of avocado and tiger prawns seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Courgetti alla puttanesca made with anchovies, Kalamata olives, capers, canned tomatoes, garlic, olive oil, butter, parsley and spiralised courgettes.
Braised cavolo nero with garlic and toasted almonds.
Raspberries and Greek full fat yoghurt.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, Romano peppers, celery, baby plum tomatoes, Halkidiki olives, mint and salad onions, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to swallow tablets.

No! Time is dragging this week, but thanks for your crossed fingers x

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: liver (topping up my iron before my surgery!) in onion gravy with Brussels, broccoli and carrots.

Hope all goes well. The hug is for the time dragging not the food. I can't help but I can pray all goes smoothly. Ideally the hospital would have some means of you having your usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee. God bless and keep you.
 
B: 2 hardboiled eggs mashed with some mayo and cream cheese
L: another cafe meal. We are away and meeting up with any friends and family nearby. I had a chicken caesar salad and a few chunky chips and a glass wine. Everyone else had magnificent puddings so I did have a few too many bites. Steamed date and rum anyone?

It's now 7 hours later and thinking I might manage to not have anything else today
 
Stamppot andijvie (endive mash) again, with melted cheese cubes and 3 rashers of bacon, yum!

I made enough mash for multiple days and only added the endive and cheese to todays portion.
Tomorrow I can use the same mash for zurkoolstamppot (sauerkraut mash) :)

@Antje77 I’m so glad you got the neoprene shoes and the float. I have one too with a whistle attached. Does yours have a waterproof pocket you can put your phone in? Very handy and sometimes people here go for full moon swims and put their phone torches on inside the float. It looks fantastic to see all these orange lights bobbing around in the dark.
There were actually two people with lights in their floats today, very cool!
The gloves and socks made an amazing difference, I didn't feel cold at all after the initial plunge.
The biggest and completely unexpected difference was having the float with a small bottle of undiluted squash though.

For the first time in 7 years I felt free again in the water! :happy:

I didn't feel I had to stay close to the way out and my hypo treats for safety, I didn't feel I had to constantly examine myself for the first signs of a low, I felt confident that if a hypo should happen, I'd be able to deal with it right in the water, or at least enough to reach dry land safely with some help from the other swimmers.

It felt amazing!

Nearly there, @Rachox. Best wishes for Friday. Liver's a good idea at this stage. I hope you manage the food thing without too much difficulty. Pretty sure the nurses will try to persuade you to be "normal" but I'm sure you can stand your ground.:)
 
Just about to have a couple of RyVita with cheese for breakfast. It's quick and I have to go out shortly to get my legs rebandaged.

2nd meal will be salmon, if Neil can get me some when he does the shopping for me. Intending to make a salad with little strips of salmon fried in butter. Just fancy the idea. Would really prefer it to be whitebait, but can't get that here. Needs must.
