Breakfast kefir then fried some tomatoes in olive oil and served with one slice of low carb toast with a fried egg
Busy day no lunch
Dinner Sea bream cooked en pappilote - usually use dill and lemon plus butter for flavour but today used sumac, lemon and Olive oil and preferred this mix I'm a new convert to Sumac. Served the sea bream with cauliflower cheese and glass of dry white wine. Then a few squares of 100% chocolate with decaffeinated coffee.

Lost count of nights on holiday, but dinner tonight was Bella Italia, tricky on LC with all that pasta and pizza. So I went for a sharing board starter. Meant for two but perfect as a main for me. It was meatballs in tomato sauce, mushrooms in a creamy sauce, crispy chicken fries (the only carby bit) and coleslaw.

Happy Anniversary @Rachox, hope you had a lovely day. Today's menu: Airfried chicken leg with above ground veg; this evening.... prawns with hm Marie Rose sauce and salad. Have a great day all. :happy:
Today's menu sounds extra special @RosemaryJackson, especially your supper.

To my mind, home-made sauces are far superior to commercial condiments, which all contain far too much salt and sugar to be diabetic-friendly.

How interesting! @shelley262. I've yet to try sumac Rhus coriaria, but I've read that its low carb content compared with lemon juice makes it a good option for diabetics. Must give it a go soon. Thank you for sharing your recipe.

Evening all

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom stroganoff made with woodland mushrooms, dried porcini, onions, vegetable stock, tomato purée, paprika, garlic, olive oil, butter, flat-leaf parsley and soured cream.
Cauliflower rice with toasted cashews and peas.
Braised cavolo nero with garlic and toasted almonds.
Skipped pud.
Water to drink.

D: Seafood salad made with crab and brown shrimps, lettuce, Romano peppers, celery, baby plum tomatoes, Kalamata olives, mint and salad onions, dressed with an olive oil, balsamic and garlic vinaigrette, topped with roasted macadamia nuts.
Water to wash down tablets.

Lunch some cheese, nuts and low carb seeded crackers followed by peel of a local apple
Dinner cooked during day in slow cooker - hm passata, venison meat balls and about 10g of low carb pasta served with grated vintage cheddar cheese and a glass of red wine

Today I was out so for lunch I had a corned beef slice. It just had some pastry on the top and bottom of it. My CGM seemed happy with it. I wasn't that hungry this evening so just used up the last of the bacon, and had a few Brazil nuts and a small piece of 85% dark chocolate.

L: Mushroom and spinach frittata made with eggs, grated mature Cheddar cheese, leeks, cream and thyme. Salad using chicory, sweet cicely, celery, mint, Kalamata olives and salad onions, dressed with an olive oil, garlic and balsamic vinaigrette, topped with roasted macadamia nuts.
Skipped pudding
Water to drink.

D: Seafood salad made with king prawns, mussels, lettuce, baby plum toms, celery, Halkidiki olives and salad onions dressed with home-made mayonnaise, topped with toasted sunflower and pumpkin seeds.
Water to wash down tablets.

I had a long drive today, partially taking the scenic route, partially simply getting to my next camping spot on busy motorways.

I snacked on salami sticks on the way, keeping things very simple diabetes wise while driving.
After putting up my tent, I had a beer first, and then a cold meal starting with dessert. :hilarious:

I still had the second half of the piece of LC carrot cheesecake I bought on tuesday so I had that for a starter.
After that I had some spicy cashew and peanut mix, reasonably but not very low carb so perfect to ward off an impending hypo. Also chicory and hummus, and more of the salami sticks.

Holidays are a perfect excuse for unconventional meals! :hilarious:

Mid pm keto cookie with tea after very long dog and walk
Dinner wild salmon and a few peas served with a glass of dry white wine
