What have you eaten today? (Low carb forum)

Breakfast kefir with nuts and seeds
Lunch some cheese, nuts, a couple of tomatoes and three low carb seeded crackers.
Mid pm after long dog walk a keto cookie
Dinner slow cooked chicken curry - quite hot I'd been a bit generous with the red chilli flakes! - garnished with fresh coriander served with low carb roti. I also had a gin with soda water.IMG_20241005_161703.jpg

I love fresh coriander @shelley262. Have never set out to grow this annual, but pot grown and cut stems are widely available here now, not only from Asian grocery stores, but also supermarkets.
 
This evening for tea I defrosted a home made chicken Madras, finely chopped some mushrooms, and fried them together with a small amount of Basmati rice.

Looks tasty @IanBish. Cauliflower rice doesn't have the fragrance of basmati rice, but alas some of us cannot handle basmati this late in the day,

Cooked with butter and Indian spices like cinnamon bark and cardamom pods, cauliflower rice makes an acceptable, diabetic-friendly alternative.
 
Evening all

Today:

B: Two poached eggs and two scallops, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and sage, baked with red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed runner beans with a knob of butter.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, baby plum tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to swallow tablets.
 
B- H/m yoghurt with a spoonful if M&s grain free granola.
L- out today, glad I anticipated the cafe lunch wouldn’t be suitable so Id packed a low carb cheese and ham roll and some olives. The others all bought food so I didn’t feel guilty eating my packed lunch in there. I did buy a coffee!
D- salad and green beans dressed with olive oil and h/m sardine fish cake. Made with just a drained tin of sardines mashed with an egg and a couple of handfuls of grated cheese. It’s a cheap and easy way to eat more oily fish which I struggle with.

Evening all

Today:

B: Two eggs scrambled in butter with a generous dollop of double cream, sautéed woodland mushrooms and a vine tomato, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Whole sea bass baked en papillote, belly stuffed with sprigs of French tarragon and garlic, drizzled with olive oil.
Steamed asparagus spears topped with a knob of butter.
A medley of baked calabrese, leeks, onions, garlic and sweet red peppers.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Salad made with anchovy fillets, eggs, avocado, lettuce, Padrón chillies, salad onions, lemon verbena and a touch of lemon juice, with a dollop of home-made aioli for dipping, topped with pecan halves.
Water to wash down tablets.
 
Have been spending the weekend with friends so eating has been away from normal routines but remained low carb. Dinner this evening was at a tapas bar, I had roasted salted almonds, meatballs in tomato sauce, and a side salad.

I thought you were inclined to avoid almonds @Rachox because of their high oxalate content.
Perhaps this was an anniverary week treat.

I like to top salads with roasted nuts or seeds for contrasting crunch,

How coincidential!

I also had dinner with friends at a tapas bar today.
I had prawns in hot garlic oil and on the empty plate (slate?) were very lightly battered calamari, eaten before I made the picture.

I also had some roasted almonds from the person at the opposite side of the table and some cheese from the platter the people to my right shared for dessert.
