What have you eaten today? (Low carb forum)


My mouth is watering at your beef short rib, it sounds delicious.
 
B-egg on cheese on l/c toast.
L- some Yarg, olives, nuts and a slaw made from grated fresh horseradish and celeriac mixed with h/m mayo. DGF cookie afterwards.
D- locally caught mackerel with buttered greens and broccoli. Few squares of Montezuma’s AB with orange to follow. I took a photo of the main meal but it looks really unappetising so I won’t post it ( tasted nice though)
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: liver with onion gravy with mushrooms and petit pois. Very low on fresh veg so fried a few remaining mushrooms and had petit pois from the freezer!

 
For lunch today I had some lovely sardines in extra virgin olive oil, with olives.

My non diabetic husband is enthusiastic about canned sardines in extra virgin olive oil @IanBish. They're an excellent source of vitamins and minerals, economical and diabetic friendly, plus you can safely eat the bones.

I'm fond of fresh Cornish sardines myself, but the season is short and other half grumbles about all the bones.
I find them fiddly to fillet.
 
Evening all,

Today:

B: Two poached eggs topped with a knob of butter, avocado and four tiger prawns all seasoned with black pepper.
Water to swallow tablet.
Espresso.

L: Mushroom and spinach frittata made with grated Cheddar cheese, eggs, leeks, cream and thyme.
Mixed green salad of watercress, chicory, celery and salad onions, dressed with an olive oil, balsamic, garlic and mint vinaigrette, topped with pecan halves.
Water to drink.

D: Seafood salad made with brown shrimps and mussels, lettuce, cherry tomatoes, Halkidiki olives, Romano peppers, salad onions and mustard cress, with a dollop of home-made mayonnaise for dipping, topped with toasted sunflower hearts and pumpkin seeds.
Water to wash down tablets.

L: Packed lunch made with leftover mushroom and spinach frittata.
Romano peppers, celery sticks and baby plum tomatoes with chicory boats for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds, hazelnuts and brazils.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, celery, vine tomatoes, salad onions, Kalamata olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to wash down tablets.
 
Yesterdays lunch with family... grilled chicken with chips and mushrooms. Had some airfried chicken drumsticks for tea with fresh tomatoes and fell completely off the wagon with some slices of Terry's chocolate orange . Hence much higher bg.
 
I didn't expect a Christmas parcel to turn up today. 4 boxes of Chocolates. Hotel Chocolate.
So started the day with Coffee and cream. Coffee and unsweetened almond milk
Cottage cheese and then beef.
Started with 2 chocolates then another 2.
Smoked salmon...... Blood Sugar after 7.4
All the rest of the chocs are going out as presents.

B: Two poached eggs and two scallops with topped with chopped, flat-leaf parsley, asparagus spears smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine
Tuna steaks rolled in finely chopped celery and sage, baked with sweet red peppers and aubergines, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed calabrese and French beans topped with a pat of butter.
Water to drink.
Skipped pud.
Two squares, Montezuma's Absolute Black 100% chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, vine tomatoes, basil, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.
 
Away on hols this week with daughter & grandchildren.
Breakfast: h/m yoghurt with grain free granola. Early lunch of cheese omelette then set off, only an hours drive.
Early evening glass of fizz in the hot tub!
Dinner was grass fed fillet steak we brought with us, with some fancy mushrooms, green salad and a quick sauce made from blue cheese and cream cheese melted with the steak juice. 1 small glass red. ( Sober October is having a little break, will continue when I get home)
