What have you eaten today? (Low carb forum)

1 egg, 1 slice of ham and 1 slice of cheese for breakfast.
Low carb bread cheese and ham sandwich for lunch.
Dinner was air fried chicken wings with avocado and a dollop of Nando’s peri peri sauce.

Yesterday I ate at a (type 2, low carb) friends house, she cooked chicken supreme and cauliflower rice for dinner.
Today:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: low carb bagel with cranberry and cream cheese with coleslaw.

Since going onto a low carb diet several years ago, mostly I've had 2 eggs for breakfast (plus black coffee). I'm not a mornings person at all and it's suited me - kept me going all morning, etc. Recently, I decided to switch to a yoghurt and fruit breakfast as it seems to suit other people and for years I had a traditional sort of Bircher-Benner muesli sort of breakfast mixture of apple, nuts, yoghurt and a small amount of oats. So I thought Greek style yoghurt and an apple would work - and it hasn't! I don't know what it's done for my blood sugars, but I really felt almost bloated. It just felt way too much. Sort of heavy on my stomach. The yoghurt on its own was OK. the apple on its own was OK. But together, it didn't work. Later in the day, it works fine! So I'm back on two eggs for breakfast, day in, day out!

I couldn't cope with any oats or a full apple. I can cope with a small amount of Apple peel. I can also cope with yoghurt or kefir with a few berries and seeds. Like you though I mainly stick to eggs for breakfast!
 
Lovely Mother's Day
Breakfast kefir then two poached eggs on one slice of low carb toast.
No lunch but indulged in one of my mothers day chocs a small dark chocolate flavoured with ginger which I had with a tea made with ginger and turmeric
Dinner a no pasta lasagne I've run out of low carb lasagne sheets so fried some mushrooms in olive oil and added on top of the beef mince and topped with mix of eggs, cream and lots of cheese. Served with green salad.

Followed by one large strawberry cut into small pieces and served with spoon of yoghurt

Skipped lunch but indulged in one of my mothers day ginger dark chocs ( 3.7 carbs per little choc) when I had an early afternoon ginger tea infusion. I'm restraining myself atm as bloods being taken in the morning for my diabetes annual review! It's definitely easier to stop going back to cupboard for more - they are very tasty - when you are heading for tests I find. It was 10 years ago I was diagnosed with diabetes and I'm very keen to keep my numbers as low as possible.

Lunch was leftover roast topside from yesterday’s family buffet, with DietDoctor ‘no tato salad’ which is very nice.
What's in the salad?
Looks good, and looks easy to take with me to work as well.

Evening meal was a good quality burger with cheese on a slice of LC bread and lots of greens.
Tomorrow will be reheated stew on the first day of my new job. :)

Spent yesterday in London with my daughter, she treated me, for Mother’s Day to dinner in Nando’s (sorry @DJC3 !).
Today usual schedule for eating:
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: coffee shop cappuccino and another carb killa bar.
Dinner: two high meat content sausages with a splash of gravy, carrots and broccoli.

Usual breakfast, full fat Greek yogurt, large tablespoon flaxseed, half a dozen raspberries, cup of tea.
Lunch about to be eaten. 2 poached eggs on 1 slice Hovis Seed Sensations toasted with loads of butter, few strawberries and cream.
Tea will be our usual Monday fry up, 3 rashers of bacon, fried egg, grilled tomato, loads of mushrooms, 97% sausage, maybe 6 stolen chips.
Wow! You don't eat much in the way of fresh vegetables, do you? We're being told the 5 portions a day recommended (in the UK) for years is way too little and should probably be double that. Heavens - I hope that doesn't sound critical - it's not meant to be. Just genuinely surprised.
 
Mid morning (after my annual blood draw and feet tickling diabetes check!) Kefir then a piece of vintage cheddar plus much needed coffee
Early lunch slice of low carb bread toasted and cooled then topped with organic soft cheese and smoked trout with a squeeze of lemon juice
Dinner piece of a shared hm frittata ( made with four large eggs, mushrooms, last of left over chicken and some salami strips plus seasoning then topped with lots of cheese before browning under the grill) served with leaves and avocado.

Followed by my last mother's day chocolate ginger with a cup of decaffeinated coffee.
