What have you eaten today? (Low carb forum)

I've found a box, of course unlabelled (as are 2 more of the same) in the little freezer. It looks like some kind of ragout but can't tell util it's defrosted. Whatever it is, it will be my 2nd meal.

My freezers are turning into magical mystery tours. There's only one with contents I can be sure of - that's where we keep Neil's soya spread, bought in bulk from Highland Wholefoods, and any concoction Neil might make and want to keep (eg macadamia nut butter). The rest have lots in them, which need to come out and be dumped or used and I think I remember, somewhere at the back there's a box of cup cakes which should have been finished off and used, but they have been languishing there for a year at least.

Em thinks I am SOO organised because I have a kitchen drawer for teas and another one for coffees. Little does she realise just how disorganised I am.
 
Yesterday I had a (“handcrafted”) cheeseburger and loads of crispy bacon (no bun), coleslaw and lettuce salad for lunch at a restaurant. No salad dressing as I didn’t know what was in it.

My Libre started shrieking within 20 minutes, startling the rest of the restaurant patrons and staff. BG continued to rise to 11.8 on my Libre which would have put it at nearly 13 on my meter if I had been able to do a finger prick test.
6 hours later the readings were still above 9. Finger prick test on getting home confirmed that. Baseline usually 6.5-7.0.
Libre graph shows the readings didn’t go below 8.0 all night. Currently 8.9 at 8:26 am.

All I had to eat for dinner was an avo with salt and pepper in an effort not to raise the readings.

What could have caused such a dramatic response?

I am gutted because it’s the first time I have eaten out since going back on LCHF and it looks as if it will be the last time.
How frustrating for you. My first thoughts on why that happened and happened so quickly would be : dressing on the coleslaw Containing a sweetener ? Bread or flour used in the “handcrafting “of the burger? Maple bacon? a drink? Or of course it could have been any of the myriad causes that affect levels despite our best efforts at controlling food and had nothing to do with your meal.

Yes I am going to pop into the kitchen tomorrow when I do my volunteer shift and have a peek at the ingredients. My list of suspects include the mayonnaise in the coleslaw and binding agents in the burger. There shouldn’t be, as it is listed as gluten free. Maple bacon is not a thing in this country and I had tap water to drink. Very odd. All day today everything I eat is causing higher than normal readings, even things like olives.

I wouldn't draw conclusions from a single meal. You may have something brewing that causes your higher readings, and it may not have anything to do with the meal.

Woke ( definitely for an Old 'un and I'm proud of it) late, 9.10 ish, so only 1 mug of tea then 2 babybels with medication. 12 hr intervals so 10.00 pm is late enough for me to be swigging anything to swallow a tablet
CWC with usual adornments to make it Ian friendly
Cheesey scrambled eggs. 3 extra large, free range according to Ocado. Not properly FR like our own hens were (just ask the foxes) or nearly as large, with KC toast and Heinz reduced everything but the price TommyK 1.40 ish. 4.4 bg at 2 hrs will do me thanks. No smashed avo so maybe not woke enough after all - I do have a beard and flannel shirt (not Carhatt, sorry) and we do have an avo smasher. More tea around 3.45 pm
Salmon cooked from frozen in the A/F salad with pine nut topping - usual Friday photo so not attached - Fenland celery in the salad. If not here where? if not now when? - proper job (wrong side of the country but TV confuse the accents) 6.00 ish. Cronometer says sub 2k cals and sub 20 gms carbs. One of those is good.
Oh, currently debating whether to buy one of those all singing all dancing air fryers @AndBreathe has. Going native is why I stay away so much although chaffles, Montezumas, bacon and usually sausages are a doddle to avoid but that's just me. We have an A/F but it is Black Friday so it is my patriotic duty to shop and a son may take the other one.

@aylalake How exasperating! My money's on the coleslaw dressing unless it was made to order especially for you. Practically all commercial mayonnaise contains some sweetener. Goodness only knows why. Best of luck with your detective work tomorrow!
 
Evening all

Today:

B: Two poached eggs topped with a knob of butter, avocado, seasoned with black pepper and a wedge of Leckford washed-rind cheese.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast,
Chicory, Romano peppers, celery sticks and baby plum tomatoes with a dollop of home-made mayonnaise for dipping.
Almonds, hazelnuts and brazils.
Strawberries to round off lunch.
Water to drink.

S: Dry and sunny but a cold, penetrating wind, so knocked off early for a warm 'em up black filter coffee.

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions and mustard cress, dressed with olive oil and a touch of lemon juice, topped with toasted pumpkin seeds.
Water to swallow tablets.
 
@ianpspurs I also sourced more Fenland celery today im keen to make the most of the shortish season and it tastes so much better than the Spanish grown celery. I was introduced to it when we lived and worked in Lincolnshire on the edge of the fens a fair few years ago!
B kefir then fried a mushroom in olive oil plus a slice of bacon and egg with LC slice of bread toasted as usual from frozen.
L just spoon of berries and yoghurt
D salmon with green beans followed by LC crumble and dash of cream.
@aylalake hugs for your outing causing problems. It may have been something in the meal such as the coleslaw or things added to burger but wondering what number you started out at before your first bite? Anxiety and stress or poor sleep can raise bgs quite a lot - well they can mine. My baseline pre meal may have been higher if anxious or maybe fighting a bug? Hope it's settling but sometimes when raised it can take a few days to settle.

Breakfast: my usual low carb coconut ‘porridge’ with raspberries (it appears there’s a shortage of strawberries :() washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and a Aldi protein bar.
Dinner: a smidge of cranberry with Brie on a LC roll and coleslaw.

Thanks. We did see the Black Friday discount and decided to buy one. Do let us all know how the spun beef goes although we tend to cook beef very low, long, slow. Don't suppose it has a retired dairy beef setting does it? It has wifi so can I link it to Alexa? I'd love to say Alexa cook my beef? :D

Today was going pretty well ...

Breakfast:- 2 x poached eggs on Srsly seeded slice with Plumb toms, avacado , spinach and a dash of brown sauce ... about 13g carbs
Snack: srsly fruit slice with butter and a babybel - 2g carbs
Lunch: 4 x chipolata cumberland sausages, salad with cheese and a dash of salad cream - plus yoghurt about 20g carbs
Snack: Pork Scratchings 0 carbs

so up until this eve 36g carbs give or take

Then I caved and ordered a Doner Kebab this eve ... food of the gods ;) , it is Friday after all so probably another 60 plus gsm carbs (I know not to everyone's taste but I love a spicy doner Kebab)

I absolutely love a doner kebab, but it tastes just as good without the bread/fries, which would make it a pretty low carb meal.

I had a chaotic day, made worse by the storm creating more chaos in my head, and my anxiety disorder taking full advantage of that, and of the fact I'll have a family thing tomorrow.

I love my family (aunt, uncle, cousins from different branches of the family, their children), and I love the yearly tradition of eating mussels to celebrate my granfather's birthday (and never mind that he passed away some 30 years ago, dying is no reason to stop celebrating your birthday, right?).
What I love less is the long drive to get there, deciding if I'll spend the night there or drive back to spend the night in my own bed, and the more chaotic things are in my head, the more such questions become impossible to answer.

The good thing about today is that my car is fixed, after having to do two weeks without!
It only cost me 25 euros too! :joyful:

After a long and unplanned day out (to do with borrowing a friend's car for tomorrow, and then finding out my car was fixed and getting it back and returning the borrowed car, and needing to go to the library and stuff), and finally feeding my guinea pigs their very late breakfast in a raging storm, cooking would have been too much.

So my evening meal was a slice of low carb bread, half with paté, half with the rest of the tasteless but cheap 'grill cheese', this time with extra salt, and a low carb cracker with a local Friesian cheese with holes.
The cheese isn't unlike Swiss emmental. Do you have cheese with holes in the UK?

That plate of food looks good to me.

In UK we do have Holy cheese (Emmental) but I don't know of a native cheese anything like it.

We do also have tasteless cheese sliced and in a block. Often supermarket own brands are like that.

Glad that your car is fixed. So is ours but it cost a good bit more than 25 euros. At least you'll be able to get to your famiy gathering in your own, familiar car. Such a good idea to keep on celebrating the life of a loved one on their birthday so everyone can get together at least once in a while. Is the gathering place for the mussel eating very far away? Enjoy anyway.

Even if it had Wi-Fi we don’t do Alexa, Siri or their chums.

Our spun beef will be low and slow. Just because it’s an airfryer it doesn’t have to mean fast cooking. Air frying is a tool, not a rule in this hacienda.

Fair warning it comes in a big box.
 
@aylalake I’d agree with the others, my money is on the coleslaw if it is something you ate. I do sometimes get inexplicable high readings though, and have come to realise ( but not understand) that there are so many more influences on BG levels than just food. I hope you’re back to normal now.
@Antje77 yes we have cheese with holes, usually Emmental. Great news about your car, and a very impressive bill. Hope the drive tomorrow is stress free and that the mussels and joyous family reunion are as good as ever.
Breakfast today was a cheese and spinach omelette ( made with genuine F/R eggs @ianpspurs Daughter has bought granddaughter an ‘egg collecting apron’ for Christmas. It’s just an apron with lots of pockets, she’ll love it)
Lunch was SRSLY filled roll- yesterday’s forgotten lunch.

The dressing on the salad might have had sugar in it. The mayo in coleslaw too could contain sugar or sugar subsitutes with higher GI than sucrose.
I too had tofu salad with dressing on Monday afternoon(20/11/23). I also had handful of peanuts along with it. Within 30minutes reading on my libre reading was 104mg/dl(5.7mmol/L) and in an hour it was 116mg/dl(6.4mmol/l) which is unusual for me. Finger prick would have shown 136mg/dl(7.5mmol/l) but I didn't have sugar meter in office. After eating salad it is 104mg/dl maximum for me. I was also hungry again within 3hours of eating my lunch.

Then I realised the dressing or the spices on tofu contained ajinomoto. Ajinomoto(MSG) wrecks havoc on my sugar levels. I avoid eating pizzas, even low carb ones as they add ajinomoto. Therefore, I make zucini+almond flour pizza at home.
 
Morning snack - almond milk coffee with 10 salted peanuts + 7 cashews.
Break fast - 2 egg omelet with spinach & tomatoe slices, greens mash with 1 spoon sprouted moong in it, chia seed pudding with almond milk, a piece of tofu, almond milk coffee.

Lunch - 2 egg white omelet with mushrooms and yellow tomatoes, spinach-brocoli soup, bitter gourd fry, greens mash.
