Morning all, celebrating low carb here, Hba1c 33! Down from 86 in May23. Not quite officially in remission as only first test when off Metformin but I’ll take it.
Wow! @sueh21. An HbA1c of 33 (down from 86 mmol/mol in May last year) certainly calls for a celebration.
Well done you!

Evening all,

Today:

B: Two poached eggs with a knob of butter and avocado, seasoned with black pepper and wedge of Gorwydd Caerphilly.
Water to swallow tablet.
Double espresso.

L: Packed lunch made with leftover walnut and mushroom nut roast.
Celery sticks and baby plum tomatoes with chicory boats for scooping and a dollop of home-made mayonnaise for dipping.
Prawns and brown shrimps.
Almonds and hazelnuts.
Water to drink.

Mid-afternoon: black filter coffee

D: Smoked salmon and cream cheese salad made with lettuce, celery, baby plum tomatoes, salad onions, Halkidiki olives and Romano peppers, dressed with olive oil, lemon verbena and a touch of lemon juice, topped with pecan halves.
Water to swallow tablets.

I've only just realised that the way I did the cabbage and bits and pieces of veg this morning makes something like cauliflower rice, without the unfortunate effects on my innards. That means I can have it as an accompaniment to meat stews, fish - whatever, or with a cheesey sauce as a kind of "cauliflower" cheese. :joyful::happy::joyful::happy:
Up to the stage where you added eggs, the blitzed and butter softened veg is what I call "fridge gravel". It can take the place of rice or be the basis of many other things

B: full fat greek with milled seeds and about 10 blueberries (hubby served it, he still doesn't get fruit portion sizes after 4 years!)

Walk 50 minutes to pub.
Omelette with spinach and mushrooms, salad and a mint tea.
Watched himself eat steak and kidney suet pudding with potatoes and veg. He "skipped" dessert but had beer and a Baileys coffee. He's supposed to be losing a bit of weight.
50 minute walk back home.

D: camembert on 2 seedy crackers with cucumber. A little 90% chocolate and a few walnuts
A hot chocolate with Baileys

Pretty happy with myself today.
Swimming pool for aquastuff this morning, followed by groceries, returning books to the library, and then I managed to convince myself to go for a cold swim on my own on the way home. :joyful:

And after that, I made very nice little meatballs with lots of onion and grated cheese for my evening meal, surprising myself! They're flat because I'm not patient enough to wait for round meatballs to cook, tastes the same anyway, just takes longer with a higher risk of ruining them.
I had 2 1/2 small meatballs, with broadbeans (canned) and cubed bacon. The last half meatball was for the dogs and cats of course. :cat:

Two meatballs left to eat cold tomorrow, and more of the mixed and seasoned mince to make more.

I meant to reply to @MommaE on that, sorry - I don't have a full size oven, I have gadgets! Ninja, single induction hob, small toaster oven (jars don't fit), microwave - I had to scrap an ancient gas cooker and decided I liked the space more than I liked a full size cooker. Hmm... well let's see how tomorrow goes, and I might try a little heating pad not in direct contact. Thanks for all the suggestions!
The heating pad, without direct contact sounds promising. Hope it goes well.

My home kefir starter isn't doing anything yet, but it is a bit cold in my kitchen, and I don't want to carry kefir fermentation jars around the house... will see if it gets going! I had the shop bought stuff to break my fast, then buttered broccoli and hard boiled egg, then an avocado with baby leaf salad and apple cider vinegar/lime juice/olive oil dressing. Then a pack of pork scratchings -feeling very full and hoping I can fast again until at least noon tomorrow.
I found my grains got friskier as they aged a bit. I guess the multiplication of the relevant bugs.

In the end, with one lot, I was adding great dollops to my breakfast, to thin them out a bit. Strange texture, but surely it was doing me good?

Hello. Rather late today. My granddaughter is here so routine flies out of the window. Very nice feeling too. Had a small jacket potato with lots of salad with cheese and beans today. Maybe scrambled eggs for tea. Tomorrow, we are going for a carvery. Much better for me because I am in control of what I eat. Hope everyone has a lovely weekend. :)

I've gone for OMAD today, very low carb, hoping for ketosis - I'm getting around 1.0 in the evenings but have a bit of dawn phenomenon and BG is slightly up first thing, ketones way down. Not to worry, I'm very committed this time!

So, today I thought I'd go with the "veggies first" advice so I had just broccoli to start with, then flat mushrooms coated in mozzerella and some beef slices from a joint I sliced and froze a while back also coated in mozzerella. Also a strong filter coffee with a dash of cream. Now extremely full and can't eat my boiled egg! I'm having the shop bought kefir now in a wine glass, after managing to dribble it down my front trying to spoon it yesterday! I must say it's lovely and I'm not a drinker so it's like having a treat somehow.

Aaaaand.... drumroll.... my kefir grains have awoken!! There are a few on the top with some bubbles, but no separation yet and the liquid is very thin. I didn't need to use the heating pad after all, it seems! I've ordered some more shop bought just in case I hate home made but hoping I will like it because it doesn't come in a plastic bottle.

Well, after a horrid 24hrs. New business opposite has new lights. Well my bedroom was like 'Blackpool' Did have a discussion on Thursday and they were off.
Last night on and another night with no sleep. Felt s--t all day. Dropped letter in and lucky for me owner rang me. Apologized and said they should have been on timer. Switched off until they can get timer to work.
Thankfully looking forward to a good nights sleep.
Back to food....

Coffee and unsweetened almond milk
Brie and gouda and tomatoes

Really do hope they sort out the lights. Have you ever considered a full blackout soft sleep mask. We bought them before going to Norway as light nights and worked so well we continued to use them they help with light mornings once we go into Summer!

The second. no idea of carb content but probably not great. But no reason to throw in the towel. Not even sure why I ate it as I’m not a fan of hash browns usually.

Think that’s me for the day now then to recover from that, I do eat moderately low carb so might have still been in limit, and it was one thing. maybe I’ll have a cold cut or two and a couple of olives later if peckish.

Mid morning small kefir then two boiled eggs with LC roll then some yoghurt
Dinner hm chicken curry with coriander and mint raita served with LC roti bread also gin with soda water. For pudding lc chocolate brownie
I'm currently trying to work out a place to book for a meal out in Brum mid week. One of our party is a vegan so it's a bit more complex will keep searching!

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a phd bar.
Skipped lunch.
Mid afternoon: black coffee and a carb killa bar.
Dinner: smashed avocado and bacon on LC toast.

Same evening meal as yesterday: oniony meatballs with (canned) broadbeans and cubed bacon. :)
Only two meatballs today, they were yesterday's leftovers. Too bad for the dogs, I ate them both, although they got to clean the plate and the frying pan.

It wasn't quite enough, I guess because of todays adventures. First I went for a spontaneous swim with someone from the outdoor swimming group. The water is now 9 °C, and we stayed in longer than I ever had before, I guess some 12 to 15 minutes, talkig with passers by, dog walkers, two guys in a boat fishing, a father and son doing some magnet fishing, very nice!
Diabetes seems to be quite used to this now, just dropping a little, but it does make you hungry of course!

Then there was an unknown cockerel right outside my garden, and we managed to get it in. Very hungry, and quite intimidated by the turkeys and the other 4 cockerels, we'll see how he'll manage. Very pretty too.
But it was yet another activity to make you hungry.

No problem, I had a dessert of a good handful or two of salted cashews, problem solved. :joyful:

Hi @ravensmitten.

When working in the USA, I saw hashed browns advertised for breakfast everywhere. (North America's answer to bubble and squeak I suppose and not recommended for diabetics or waist watchers).

The dish seems to have caught on here in some circles. I prefer a full English myself; without the toast or fried bread obviously.
