What have you eaten today? (Low carb forum)

Coffee and cream
Red salmon Balsamic vinegar Tomatoes
Stir fry veg beef and chicken. Mini pancake roll
 
Out early so took breakfast with me - 2 Babybells and a handful of mixed nuts.
Couple of black coffees.
Packed lunch of l/c roll filled with beef, cheese and sauerkraut. Montezuma’s AB.
Dinner was some scallops sauteed in garlic butter and salad. L/c brownie.

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: chicken satay stir fry (no noodles).

Breakfast kefir then scrambled eggs on hm LC toast
Lunch lc seeded crackers and cheese and a buttered slice of hm LC barberry tea loaf.
Dinner chilli con carne using left over Bolognese from yesterday just added chilli and cumin plus a fifth of a rinsed and strained can of kidney beans.

Followed by hm LC chocolate brownie.
 
B- 2 boiled eggs
L- Sardines on L/c toast followed by L/c brownie
D- Hearty beef stew with dumplings made from Panda suet pastry mix. They were a bit slimy but Ive always found regular dumplings are a bit slimy so maybe they were just the same. Slice of the L/c spiced ‘Parkin’ cake to follow

Lunch today was a beef salad sub roll. It was quite high in carbs (~50g I think) and I didn't feel like any more carbs today, and I wasn't all that hungry, so I had a couple of fried eggs, used up the last of the smoked ham and the mushrooms, and garnished it with a tomato.

Made a sticky ginger cake today using Panda flour and their recipe

Used chopped ginger as a topping - cooking it with inulin and water as recipe made it taste a bit like crystallized ginger just not as sweet but delicious.
Breakfast kefir then poached egg on LC hm toast
Lunch cheese and LC seeded crackers followed by slice of sticky ginger cake.
Dinner used my left over LC panda pastry from making a quiche a few days ago. Made a chicken and veggie low carb pie. Cooked the chicken and veggies in chicken stock in slow cooker - lots left to make soup for lunches next few days.

Followed by hm LC lemon cake.

One of the limitations of using the app is that the only available response button is ‘like’.
What I wanted was an ‘envious’ button for your Nando’s meal!
 
Another baking day today did a low carb panda flour 'jam' school tray bake which tastes just like a jam sponge pudding when warmed. Made one a few weeks back but had been stingy with the 'jam'. This time doubled the hm LC jam. Used a full pack of frozen raspberries and bubbled it in a pan with juice of one lemon and some inulin for 10 mins. ( last time used half a bag of frozen raspberries) this is definitely right amount of 'jam'.

Lunch hm LC chicken vegetable soup followed by slice of hm LC ginger loaf
Dinner wild salmon with peas followed by portion of hm LC 'jam ' sponge pudding warmed and served with cream.
 
Another fabulous looking cake @shelley262 and another one I must try.
Today I had yoghurt, blueberries and seeds for breakfast.
Lunch was a slice of beef, h/b egg, 2 cherry toms and coleslaw made from cabbage and chilli mayo. Slice of L/c Parkin.
Mid aft - 4 sq Montezuma’s AB
Dinner- shepherds pie with cauli mash and cheese on top. A few sprouts.
