What have you eaten today? (Low carb forum)

B- Cheese crusted omelette.
L- annoyingly undisciplined picking while cooking and preparing food for tomorrow’s picnic: cheese ( far too much). Chicken nugget ( chicken breast strips coated in egg and pork panko). 1/2 a l/c roll with a spoonful of egg mayo. I think that’s all..
D- rump steak, grilled halloumi and salad. 4 squares Montezuma’s and a decaf coffee with cream. IMG_1722717815.154694.jpg
 
I tried that a couple of times (mixing the cheese in with the egg). Though I prefer melting the cheese on top. That looks attractive, mind.
If you combine the cheese and egg mixture before cooking @IanBish, you'll produce a nice cheese omelette, but it won't be cheese-crusted.

An easy way to achieve a cheese crust is to melt the butter in a non-stick omelette pan or small frying pan. Then spread grated cheese (about 3 ounces for a 2-egg omelette) in an even layer over the base of the pan and cook until golden. Carefully pour your egg mixture over the cheese and lower the heat. Cook for a few minutes without stirring.

Place filling of choice (eg. mushrooms, sweet peppers, baby spinach leaves, cream cheese and herbs) on half of the omelette and cook for a few more minutes.

When the egg starts to set, fold the empty half over the side with toppings to form a crescent. Cook for a few more minutes and serve.
 
Evening all

I never tire of eggs with avocado; a match made in heaven, but on Saturdays when there's a little more time, I enjoy my eggs with asparagus topped with a knob of butter. The English asparagus season is well and truely over, but I've been able to obtain asparagus, mostly imported from Italy, until this week. In its place today, I used purple sprouting broccoli, another favourite vegetable.

Today:

B: Two poached eggs, two scallops and purple sprouting broccoli smothered with butter, all seasoned with a good grinding of black pepper.
Water to swallow tablet.
Espresso.

L: Aperitif: dry white wine.
Tuna steaks rolled in finely chopped celery and sage, baked with sweet red peppers and mushrooms, moistened with double cream and topped with extra mature Cheddar cheese.
Steamed French beans and mangetout with a knob of butter..
Water to drink.
Skipped pud.
Four squares, Montezuma's Absolute Black 100% cocoa chocolate.

D: Seafood salad made with king prawns and brown shrimps, avocado, home-grown tomatoes, salad onions and Kalamata olives with home-made aioli for dipping and topped with roasted macadamia nuts.
Water to wash down tablets.
 
Did a buffet for a small family birthday get together - my birthday is tomorrow but had to be weekend as youngest son busy at work on the day. Both my meals today were from the buffet - lunch is pictured but had similar just now for dinner but with additional home cooked ham and some cheese

Also opened lovely bottle of cremant fizzy wrne and had a low carb chocolate brownie
Planning to go out for day tomorrow and have a treat Nandos meal.

I didnt mix the cheese in with the egg, just sprinkled a handful or 2 into a non stick pan until it was melted and bubbling, then poured eggs on top. Couple of black coffees this morning before a couple of hours drive to meet family for a picnic.
Picnic included egg mayo sandwich ( l/c bread) tuna muffin, chicken nugget ( coated in pork panko) and a few strawberries. Water to drink ( lots)
Arrived home about 7pm quite hungry. H/m yoghurt and stewed rhubarb was quick and easy then a DGF cake and tea with lactofree milk.

Yes, now you come to mention it @DJC3, I'm fairly sure my recipe at #63,231 started life at Diet Doctor. You don't have to be a member to access this and scores of low carb recipe ideas.

Btw, I was a paid-up member for about 3 years, but discontinued my subscription when the site became increasingly preoccupied with weight loss, or so it seemed to me, and paid correspondingly less attention to diabetes.
