Is the 50g of insulin a typo? I like the sound of a low carb lemon jam.Breakfast kefir then scrambled eggs
Lunch cheeses and LC seeded crackers followed by a slice of my hm LC lemon drizzle cake -made this morning. I experimented making a zingy lemon jelly\jam. Put into a pan juice of two lemons topped up to 100g with water, zest of the two lemons and 50g of insulin simmered for ten minutes produced a good result used to top today's lemon tray bake.

Apologies it's inulin and insulin was an auto correct ! Good to know someone is reading and spotting the mistakes thank you, not sure what 50g of insulin would do simmered for 10 mins ......Is the 50g of insulin a typo? I like the sound of a low carb lemon jam.

Inulin powder can be used as a sweetener as it's a fructan that the body can't digest but it's not as sweet as others. Its around 10% of sweetness of table sugar per spoon. it's also really good for thickening and caramelizing when heated. It's a soluble fibre produced from plants and has several health claims 're gut health etc.Interesting, I’ve never used that. Do you use it as a direct sugar replacement?
Oh yum yumI don’t post on Sundays usually, because I have the same thing for dinner with in laws. Meat, cheese and salad buffet followed by one Jaffa cake! I thought I’d post a pic of my regular breakfast. Keto coconut ‘porridge’ with strawberries.
