What have you eaten today? (Low carb forum)

Breakfast kefir then scrambled eggs
Lunch open sandwich made with hm LC bread topped with ham, mustard and a couple of small tomatoes followed by hm LC coffee and walnut cake
Dinner pork medallions served with cream mushroom sauce ( made from butter and cream added to mushrooms) followed by hm LC chocolate brownie.
 
Coffee and cream x 2
Coffee and unsweetened almond milk
Onion Balsamic cheese Tomato
Ham
Blackberries and cream
Corned Beef Tomatoes
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: mature cheddar on LC toast with a thinly sliced half a Braeburn apple hidden under the cheese!

B- Greek yoghurt and blueberries.
L- L/C bagel with smoked salmon and cream cheese. 4 sq Montezuma’s AB
D- charcuterie, cheeses and black olives.

Dinner salmon with sumac and lemon, peas and cauliflower cheese

Last day of holiday, we’re leaving tomorrow. It’s rained all week but still been a good break.
Out for a big fry up breakfast - double bacon and eggs with mushrooms and grilled cherry toms.
Not really hungry for lunch but ate the last of a tub of cottage cheese mid afternoon to save it wasting!
D- out at a brilliant tapas restaurant in Bude. I had cheesy chorizo and sea bass on green beans with c
Basil oil, a Really excellent meal.
I can only post one photo so I’ve chosen the sea bass just to show how big the portions of tapas ( ‘little plates’) were.

Lunch cheeses and LC seeded crackers followed by a slice of my hm LC lemon drizzle cake -made this morning. I experimented making a zingy lemon jelly\jam. Put into a pan juice of two lemons topped up to 100g with water, zest of the two lemons and 50g of inulin simmered for ten minutes produced a good result used to top today's lemon tray bake.
Dinner hm curry with fresh coriander
Having issues with images again.
Edit typo inulin in lemon jelly not insulin it was auto corrected! And photos added although one in small format.

Is the 50g of insulin a typo? I like the sound of a low carb lemon jam.
 
Didn’t bother with breakfast as we had to check out of our holiday lodge at 10am ( did have 3 cups of coffee though!)
Lunch when we got home was a L/c roll filled with cheese and sauerkraut. Slice of L/c Parkin.
Dinner was local grass fed rump steak with mushroom and garlic sauce and sprouting broccoli. 4 sq Montezuma’s AB

Apologies it's inulin and insulin was an auto correct ! Good to know someone is reading and spotting the mistakes thank you, not sure what 50g of insulin would do simmered for 10 mins ......
Interesting, I’ve never used that. Do you use it as a direct sugar replacement?

Inulin powder can be used as a sweetener as it's a fructan that the body can't digest but it's not as sweet as others. Its around 10% of sweetness of table sugar per spoon. it's also really good for thickening and caramelizing when heated. It's a soluble fibre produced from plants and has several health claims 're gut health etc.
