What have you eaten today? (Low carb forum)

Back home and back to normal food plan.
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: salmon and Philly cheese on a low carb roll with coleslaw.

A second ( and last) attempt at the cottage cheese pancakes. Stuck to the pan again so topped the resulting mess with raspberries and cream and thoroughly enjoyed it.
Mid afternoon main meal with family round. Chicken&mushroom pie with sauteed cabbage and steamed runner beans. I made myself an individual pie using fat head dough as pie crust.

Busy weekend with visitors and celebrating our Wedding Anniversary - stuck mainly to low carb, as I was the cook, but did also agree to have a very small piece of our definitely not low carb Golden Wedding cake. Tasted very sweet but small bit and cut the chunk of icing off so resulting sugars not too high. The enjoyable celebratory dry Champagne I had with it may also have helped keep sugars lower!

Lunch hm hummus with celery and a few nuts followed by berries and yoghurt
Dinner left over cooked meats and salads.

I’m glad you were able to enjoy a piece of your anniversary celebration cake without too much of a BG reaction. Champagne is a great antidote!

Dinner: low carb fish pie with roasted Mediterranean veggies.
