What have you eaten today? (Low carb forum)

Having trouble with posting pics again. Last try….

Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: avocado with prawns in Marie Rose sauce and coleslaw.

Made a low carb high protein loaf today - it's in photo of dinner cooling in background. Not sliced it yet as best cooled for 3+ hours.
Breakfast kefir then scrambled eggs
Lunch hm chicken and veggie soup followed by hm LC ginger cake
Dinner hm chicken curry served with fresh coriander followed by hm LC chocolate brownie

Edit just sliced new loaf it's denser than the olive oil version. This one uses cottage cheese - will see what it tastes like tomorrow.

More baking today on a cold wet Sunday. Made three low carb Panda Flour bakes : coffee, cinnamon and walnut tray bake, cinnamon doughnuts and Panda Puffets ( a low carb muffin like bread)

Lunch hm LC bread with mackerel pate followed by one of my delicious cinnamon doughnuts
Dinner slow cooked beef casserole served with cauliflower cheese.

B-2 boiled eggs then off on holiday with the family: all of an hours drive away over the border to Devon.
L- L/c roll filled with cream cheese and sauerkraut.
D- t/a curry: chicken tikka and saag paneer which tasted suspiciously sweet. Raise BG more than I’d have liked but not into scary realms.

What are the puffets like @shelley262 ? I bought some egg rings to try making them, but haven’t got round to it yet. They look really good.
 
Breakfast kefir then toasted one of my low carb muffins and served with poached eggs
(@DJC3 you asked about the puffets/muffins they were easy to make yesterday and I thought tasted similar to normal carb muffins but denser in texture. Good bread type result for a quick mix and 10 mins cook in egg rings in pan. Bet they are good served fresh too.)

Dinner LC pasta Bolognese bake served with grated cheese.

Still away on hols, self catering so easy usual breakfast of boiled eggs.
Lunch was protein bread spread with cream cheese and some DGF dark chocolate.
Dinner - another pasta bolognaise! There are 9 of us so it’s easy to cook in bulk and I brought along my own L/c pasta.
@shelley262 thank for the pufflet review. I’m really looking forward to making them when I get home.

Yesterday....
Coffee and cream
Coffee and unsweetened almond milk
Ham and coleslaw
A small piece of cherry brownie (amazingly blood sugars were not affected yesterday or this morning)
Smoked salmon
 
Breakfast kefir then poached egg on hm LC toast
Lunch open sandwich - one slice of hm LC bread with ham and mustard and a few small tomatoes followed by portion of hm LC coffee, cinnamon and walnut cake
Dinner chicken wrapped in prosciutto and topped with grated cheese served with mushrooms and creamy smoked paprika tomato sauce.

Wild swimming in the lake first thing so we felt we deserved a big fry up at the cafe afterwards. Eggs ( they swapped my black pudding for an extra egg) bacon, sausage, mushrooms and cherry toms. Really hit the spot.
Lunch- raspberries and Greek yoghurt.
Dinner - steak and halloumi with salad of watercress, avocado and black olives.

Dinner: sea salt and chilli pork belly strip with a little drop of gravy, cauliflower, brocolli and carrot.

Yesterday for supper, I had a pizza, with Mission Carb Balance wrap as a base and a thin layer of spicy tomato sauce, sliced olives, Gruyere cheese (ran out of mozzarella), and oregano, baked at high temperature a few minutes until the cheese was melted and bubbly. Delicious .
