What have you eaten today? (Low carb forum)

B- 2 soft boiled eggs with Edam cracker.
L- L/c bread open sandwich topped with cottage cheese and chilli sauerkraut. 1 cream cheese topped L/c brownie.
D- out for dinner. Lemon sole with mixed greens. It was delicious but had a panic when testing my bg beforehand and saw 12.5! They’d given me fat coke rather than Diet Coke. I had a mini meltdown but the waitress was mortified and so apologetic I couldn’t stay cross. We got 50% off our meal and BG was down to 4.9 2 hrs later.
Lesson learned - always ask for a bottle or can of Diet Coke. I usually do but forgot this time.

If it comes unbottled, you can use your meter to test the coke before you drink it instead of your blood afterwards. A small drop of coke, tested like it was blood will show you if it's the full fat one with most meters.

First 'proper' meal in a week, first time being properly hungry too with this lurgy. :)
Admitted, most of the work was done by Aldi, I had half of a 'fish fillet a la Bordelaise' from the freezer section, but I did squeeze a slice of lemon over it for a more culinary experience, and I made a very nice salad of lots of raw onion (ah, odd cravings when ill but no reason not to give in in this case), small sweet tomatoes, cucumber, feta cheese with a dressing of olive oil, balsamic venegar, salt and pepper.

Should have been more than enough but still hungry so I followed up with a piece of Tynjetaler (Friesian cheese with holes) and a piece of paté, apparently I'm catching up on missed food. :)

Breakfast kefir then garden tomatoes fried in olive oil served on hm LC toast - getting to end of my tomatoes ( last few being ripened indoors)
Lunch open ham sandwich on LC hm bread followed by piece of LC hm parkin
Dinner hm Bolognese with low carb pasta sprinkled with grated cheese

Good advice about testing Coke with a glucose meter thank you. I did wonder ( after the event) if that might work.
Glad you’re recovering from the lurgy. I’ve heard other people say the Aldi fish a la Bordelaise is good.
 
Breakfast: my usual low carb coconut ‘porridge’ with strawberries washed down with a black coffee.
Late morning: black coffee and a carb killa bar.
Skipped lunch.
Mid afternoon: black coffee and another carb killa bar.
Dinner: creamy garlic prawns with sliced sauteéd courgette.

Can I ask where you get your low carb pasta from please?
That looks lovely.
It's the caio brand I use I've also used the lasagne sheets . Think you can get from Amazon too now. It's very good but pricey however I only use a small amount for two of us - about 40g and soak in boiled water for a few hours before adding to Bolognese. It swells up and I find works well.

Thank you - I've been missing pasta - will give this a go.
 
Made another low carb Golden Panda loaf today - love the bread and very low carb - 1.5 g of carbs per 100g and just weighed a slice which was 24g so that's 0.37 g per slice! Using the Panda Pantry's bread mix is very easy just need to add olive oil, egg whites and water. No kneading involved. Leaves lots of egg yolks to use up though so planning on baking an egg custard tart in a day or so. Inspired by pastry week on GBBO I'm going to try out low carb Panda pastry.

Looks very good, I wish they sold it around here!

I had a cob of corn with butter and salt, and 2.5 chipolata sausages.

B- l/c rye bread topped with avocado and fried egg.
L- SRSLY seedy roll with beef, salad and chimichurri mayo. H/m brownie
D- Out- pre theatre tapas meal of fresh fish with preserved lemon and greens. Smoked mackerel salad and a mouthful of daughter’s slow roast lamb
