Ingredients
To make Spiced Parsnip Soup, you'll need:
  • 1 medium potato 
  • 700g parsnips 
  • An onion, finely chopped 
  • 2 tbsp. olive oil 
  • 4 cloves of garlic, finely chopped 
  • ½ tbsp. ground ginger 
  • 1.5 tsp. ground turmeric 
  • 2 tsp. cumin seeds 
  • 1 tsp. black mustard seeds 
  • 1.5 tsp. ground coriander 
  • 1 litre of vegetable stock 
  • 275ml of natural low fat yoghurt
  • 1 tbsp. fresh lemon juice 
  • Salt and pepper to season 
  • Freshly ground nutmeg to garnish

Method

  • Put the potato, parsnips and onion in a pan with 50ml of water. Bring the water to the boil, turn the heat down and cook the mixture for another 10 minutes. 
  • Add in the spices, ginger, garlic and lemon juice. Stir thoroughly and cook for a further 2 minutes. Pour the stock in and season thoroughly. 
  • Once again bring the mixture to the boil, cover and simmer for around 15 minutes. Whizz the mixture inthe blender and place back in the pan. 
  • Next stir the yoghurt in, season and serve with a garnish of fresh parsley and a sprinkle of ground nutmeg.
