Spiced Parsnip Soup
Serves: 6
Ingredients
To make Spiced Parsnip Soup, you'll need:
- 1 medium potato
- 700g parsnips
- An onion, finely chopped
- 2 tbsp. olive oil
- 4 cloves of garlic, finely chopped
- ½ tbsp. ground ginger
- 1.5 tsp. ground turmeric
- 2 tsp. cumin seeds
- 1 tsp. black mustard seeds
- 1.5 tsp. ground coriander
- 1 litre of vegetable stock
- 275ml of natural low fat yoghurt
- 1 tbsp. fresh lemon juice
- Salt and pepper to season
- Freshly ground nutmeg to garnish
Method
- Put the potato, parsnips and onion in a pan with 50ml of water. Bring the water to the boil, turn the heat down and cook the mixture for another 10 minutes.
- Add in the spices, ginger, garlic and lemon juice. Stir thoroughly and cook for a further 2 minutes. Pour the stock in and season thoroughly.
- Once again bring the mixture to the boil, cover and simmer for around 15 minutes. Whizz the mixture inthe blender and place back in the pan.
- Next stir the yoghurt in, season and serve with a garnish of fresh parsley and a sprinkle of ground nutmeg.
