To make Baked Chicken with Mixed Veg, you'll need:
  • 4 chicken breasts 
  • 2 tbsp. olive oil 
  • 200g celeriac, diced 
  • Sprigs of rosemary 
  • Salt and freshly ground pepper to taste 
  • 200g mixed vegetables

Method

  • Preheat the oven to Gas Mark 5 or 190°C. 
  • Line a baking tray with baking parchment. 
  • Put the chicken breasts on the baking tray, and drizzle with a tablespoon of olive oil. 
  • Bake for 20-25 minutes in the preheated oven, until the chicken breasts are golden brown. 
  • Meanwhile, half-fill a saucepan with water and bring to the boil, then cook the dried celeriac for 7 minutes. 
  • Pan fry the boiled celeriac with sprigs of rosemary, and season with salt and pepper. 
  • Serve the chicken with the pan fried celeriac and boiled mixed veggies of your choice!
