Baked Chicken with Mixed Veg

Ingredients
To make Baked Chicken with Mixed Veg, you'll need:
- 4 chicken breasts
- 2 tbsp. olive oil
- 200g celeriac, diced
- Sprigs of rosemary
- Salt and freshly ground pepper to taste
- 200g mixed vegetables
Method
- Preheat the oven to Gas Mark 5 or 190°C.
- Line a baking tray with baking parchment.
- Put the chicken breasts on the baking tray, and drizzle with a tablespoon of olive oil.
- Bake for 20-25 minutes in the preheated oven, until the chicken breasts are golden brown.
- Meanwhile, half-fill a saucepan with water and bring to the boil, then cook the dried celeriac for 7 minutes.
- Pan fry the boiled celeriac with sprigs of rosemary, and season with salt and pepper.
- Serve the chicken with the pan fried celeriac and boiled mixed veggies of your choice!
